On the edge of the coast, Château de l'Hospitalet overlooks the Mediterranean. Benefiting from a semi-arid Mediterranean climate with mild winters, the vineyard enjoys exceptional climatic conditions, both in terms of the duration of sunshine, the amount of heat stored during the day by the limestone and released at night to the grapes, and the effect of the Mediterranean Sea which moderates temperature variations, as well as the altitude which mitigates the summer heat. Two types of soil contribute to the generosity, aromatic complexity, vibrancy, and freshness of this cuvée: the marl-limestone soils of the Gargasian period, at the foot of the cliff, rich in fossils, which provide the vines with water throughout the summer despite the lack of summer rains; and the red Mediterranean soils of the Barremian period, formed on the compact, bluish-grey limestone reclaimed from the garrigue, allowing for the production of rich and concentrated wines. This vineyard was designed to achieve optimal quality: careful selection of vines at planting, north-south orientation of the rows for better light penetration, and high-quality pruning using the Cordon de Royat trellis system. Yields are moderate, ranging from 35 to 40 hl/ha, and the grapes are ripe, healthy, and concentrated, allowing for easy extraction of color and aromas during fermentation and maceration thanks to slow ripening. The grapes are harvested by hand and transported to the winery in crates. A portion of the Syrah is vinified using carbonic maceration. The Grenache, Mourvèdre, and Carignan are destemmed and placed in temperature-controlled stainless steel tanks for traditional maceration lasting 20 to 25 days. The different grape varieties are vinified separately. At the end of winter, the wines are racked, blended, and placed in 225-liter barrels in the Château l'Hospitalet barrel cellar for 12 months.
