The Bollinger house is one of the most demanding in Champagne. Since 1829, it has been crafting full-bodied and powerful Champagnes, some of which are aged in oak barrels. The Bollinger vineyard originates in the village of Aÿ, a Grand Cru village, home to the historic vines, including the vines used to produce Vieilles Vignes Françaises, a truly unique vintage brut Champagne. The Bollinger estate has mastered the art of vinifying Pinot Noir. The best example, and perhaps the most unexpected, is Côte aux Enfants, a still red wine made from Pinot Noir grapes grown on vines planted at the foot of the estate.
